Vietnamese Mint Chicken Rice

Vietnamese Mint Chicken Rice
Serves                      4
Ingredients
  • 2 tbsp oil
  • 2 tbsp chopped onions
  • 2 tbsp chopped garlic
  • 1 large stalk of spring onion,diced
  • 1 tbsp Vietnamese fish sauce
  • 1 tsp sugar
  • 250 g of chicken sliced
  • 50 g bamboo shoots,sliced
  • crushed red chili flakes,to taste
  • 50 g fresh mint leaves
  • 600g boiled white rice
  • 50 g chili flakes
Preparation
  • Heat the oil and saute onions,garlic and spring onions over medium heat.
  • Add fish sauce,stirring continuously.Mix in the sugar.
  • Increase heat and add chicken.Stir-fry until almost done.
  • Toss in the bamboo shoots and chili flakes and finally mint leaves,so that they don't cook longer than 30 seconds.
  • Serve over boiled whit rice.
