- 2 tbsp oil
- 2 tbsp chopped onions
- 2 tbsp chopped garlic
- 1 large stalk of spring onion,diced
- 1 tbsp Vietnamese fish sauce
- 1 tsp sugar
- 250 g of chicken sliced
- 50 g bamboo shoots,sliced
- crushed red chili flakes,to taste
- 50 g fresh mint leaves
- 600g boiled white rice
- 50 g chili flakes
- Heat the oil and saute onions,garlic and spring onions over medium heat.
- Add fish sauce,stirring continuously.Mix in the sugar.
- Increase heat and add chicken.Stir-fry until almost done.
- Toss in the bamboo shoots and chili flakes and finally mint leaves,so that they don't cook longer than 30 seconds.
- Serve over boiled whit rice.
